The Notre Dame Haiti Salt Project is working with Cargill Foods to produce an distribute a fortified salt in Haiti. My thesis is dealing with the technology, feasibility, and marketing of the salt in Haiti. The salt is fortified with Iodine and diethylcarbamazine: a drug that prevents the transmission of Lymphatic Filariasis, a parasite responsible for elephantitis, and the second leading cause of fatality amongst infectious diseases in developing countries.
